Vegetarian bacon muffins

Ingredients

2 1/2 cups self-raising flour

1 pinch salt and pepper

125g butter, cooled, melted

1 cup milk

2 eggs

100 g parmesan cheese

100 g Vincent Vegan bacon bits

1/2 red capsicum diced small

50 g parmesan cheese


Cooking Instructions:

  1. Preheat oven to 200°C. Fry vegan bacon bits and capsicum for a min.

  2. Sift flour into a bowl, add most of parmesan and season well with salt and pepper. Whisk eggs and milk until combined. Make a well in the flour and add the milk mixture and the butter, and fold until combined.

  3. Fold in the vegetarian bacon bits mixture.

  4. Spoon into a greased muffin tray, top with extra parmesan and cook for 20-25 minutes.
